Napa Cabbage - has been a struggle for us in seasons past. The insects absolutely love eating their tender leaves and burrowing inside of the heads as they form. This harvest rocked and we’re stoked about it! Napa is great in stir fries, slaws, and kimchi.
Shallots - are comparable to a mild and softer tasting onion. They blend nicely into salad dressings, sauces, and soups and are a great raw garnish on top of chili or tacos.
Butternut Squash - is the only winter squash we grew this year. Winter squash is a crop that takes up a lot of space for only getting one harvest, so we have decided to let the bigger farms grow this crop. This will allow us to focus on crops that make more sense for our scale; carrots, salad mix, tomatoes, and other smaller things that don’t take up as much space. That said, we love squash, particularly the butternut. It stores all winter and makes an awesome soup or veggie roast. We don’t have a great place to store a large quantity of them when it starts freezing, so we wanted to distribute them to their final destination before we needed to scramble for a spot to store these heavy fruits.
