GARLIC
There are two categories of garlic: Hardneck and Softneck.
Hardneck:
Cloves are bigger, but fewer
Usually have thicker skins, paying them easier to peel
Don’t store as long because of the stalk in the middle - which is where garlic scapes come from
Softneck
Cloves are smaller, but more abundant
Usually have thinner skins, making them harder to peel
Store much longer than hardneck because there is less surface area for oxidation
STORAGE: Store outside of fridge, away from direct sunlight with good ventilation. Store garlic with storage onions and away from potatoes. Hardneck varieties should be eaten first, as their shelf life is shorter. Softneck varieties are a little more tedious to work with in the kitchen, but they store longer, which is why we grow both.
