SCALLIONS

Scallions are a nice way to get that fresh onion flavor before the bulb onions are ready to be harvested. Use them as a garnish, in soups and salads, quiches or frittatas, or cooked into savory pancakes.

STORAGE: Store in a closed container or in a plastic bag in the fridge. They should last about 2 weeks.

PRESERVATION: To extend the harvest, freeze whole or chopped in an airtight plastic bag.
