*Bok Choy- is delicious raw or cooked. Can be substituted for celery in any recipe (try “ants on a log” with a rib of choy instead of celery!!!), great in stir fries, salads, and soups.
*Kohlrabi- is in the same family as broccoli, cabbage, and kale. Has a taste similar to cabbage, with a texture like an apple mixed with a potato. Most folks peel it and cut around the core. Great roasted and stir fried, but we love it shredded raw in a coleslaw or on top a salad.
*Garlic Scapes- are the flowering stem of a hardneck garlic plant. The scapes are tender and flavorful, and can be used as you would used garlic in any recipe without the hassle of peeling skins!
