Fennel - is a vegetable in the carrot and dill family. It has a crunchy texture and a mild licorice taste that softens are its cooked. In my opinion, it matters how you cut fennel. Thin slices are a must if you’re going to eat it raw. Even when I roast it, I cut it thin. If you have access to a mandoline, the smallest couple settings are the best. Trim the stalks and fronds (the frilly things) and hold the bulb upside down on the mandoline, slicing until you reach the core of the bulb, which gets tough. A vegetable peeler works fine, too. The fronds can be used as a garnish in any dish or drink, or to brighten up a salad dressing.
Basil - does not like to be refrigerated. I store it in a glass jar lined with a damp tea towel, with the lid on, on the counter.
One of our goals in providing a CSA is not to overwhelm our members with overabundant shares. We totally realize that these first few weeks have been potentially overwhelming! This season has been immensely abundant, probably due to the warmth, but also because we’re starting to see the entire landscape and ecosystem of our farm change right in front of our eyes. We want to make sure to distribute a variety of produce to our members when we have it.
