*Curly endive, or frisée. This type has narrow, green, curly outer leaves. It is part of the chicory family. Our night to cook for our household is Thursday, and we are planning to make a Caesar Salad with homemade dressing and grilled chicken using the endive (cut thin) and the romaine lettuce.
We hope you enjoy what may be the last green-filled share until fall! Once the weather starts regularly being 70 degrees overnight, lettuce is not happy, so we wanted to make sure that we distributed them before they got overwhelmed by the head. The tiny romaine in your share is actually one of the lettuces we grow for the salad mix. We plant regular heads of lettuce, but with closer spacing, and cut the leaves just above the growth point so that they grow back. We definitely get two, but try to get three cuttings from each plant. This spring has been so bountiful with greens, that we ended up not needing to harvest these romaines as leaves. We are planting a second succession of tomatoes in the bed that they are growing in, so we wanted to give them a home because they looked so cute!
Tons of new crops are coming on the horizon. The snap peas, snow peas, and beans are full of flowers, and starting to grow little legumes. Broccolini is a crop that we usually don’t have enough of at one time to give every member the same week, so we use a weekly rotation for distibution. If we were to plant enough for everyone at the same time, we would end up with loads of broccolini every week, leading to excess crops that we don’t have an outlet for. We love growing for CSA because we can plan our crops in the winter and have a plan for distribution so we don’t end up wasting things that are expensive to us; seed, seed starting mix, compost, and most of all TIME spent planting, weeding, and harvesting. Easy Fridge Pasta Salad:
Udon noodles (cooked and cooled)
Radishes (cut into small cubes)
Turnips (cut into half moons)
Napa (thinly sliced
Scallions
All these ingredients are interchangeable with most items in the share!
1/4 c peanut butter
2 T gochujang paste
1/4 chimichurri
2 T Szechuan sauce
1 T rice vinegar
chili flakes
salt to taste
Mix everything together with your hands and taste often, adding more of what you want it to taste like! We like to make a big batch and eat from it all week!
