*Beets - why are the greens cut?! One of the main pests for the beet family is the leaf miner. We kept these beets covered under row cover for their entire time in the field, but the leaf miners still got to them, resulting in unattractive leaves, so we cut them off.
*Shishito peppers - have a very mild flavor and are a great vehicle for some salt and fat. 1 in about 20 are a teeny bit spicy, so consider yourself lucky if you get one. This is our simple go-to recipe that is great as an appetizer or snack or piled on top of anything…
Get a pan (cast iron if ya have one) sizzling hot with coconut oil, butter, bacon grease, or any other oil that can withstand hot temps. When it's sizzling, throw the peppers in whole, stem and all, and sprinkle with a healthy amount of sea salt. Fry for about 2-4 minutes, moving around with tongs so they blister on all sides. Squeeze some lime juice on top. Eat whole, but not the stem!
